Sri Lankan Signature Dish; “Kottu”

If you have ever been to Sri Lanka and failed to have a nice dish of Kottu, You have missed so much in Sri Lankan

food culture. Kottu is a dish that mainly consists of striped thin Parata. That contains slices of carrots, Onions, and Sri Lankan spices to make it mouth-watering. Chicken gravy is added for added taste and moisture. Please find the secret recipe for the chicken gravy at the link below.

Now, who wants a delicious dish of flavorsome Kottu seasoned with spicy chicken gravy? Ingredients for a delectable Kottu meal are listed below.

Ingredients 

01) 100g of shredded cabbage
02) 1 large shredded carrot
03) 5 chives – chopped
04) 2 tbsp of Ginger- Garlic paste
05) 1 large onion – Diced
06) 3 tbsp of Butter
07) Salt
08) Parata pieces from 10 paratas.
09) 1tsp Coconut oil
10) 2 tbsp of Soy sauce
11) 1- 1.5 cups of spicy chicken gravy (with chicken pieces)
12) 1 egg (optional)

Method 

Step 01
Add butter and oil to a pan. After that, add the diced onion. Cook till it turns a light brown color.

Step 02

When it got slightly brown add ginger-garlic paste.

Step 03

Thereafter add cabbage, carrot, salt, and Soy sauce. (in this point you can add an egg if you prefer. If you add an egg scramble it and mix it with the rest of the mixture.)Cook it for about 5 minutes.

Step 04

Then add Parata pieces and stir them.

Step 05

Finally, add the Chicken gravy ( with chicken pieces). Allow it to simmer for about 5 minutes, or until the excess liquid has evaporated.

Step 06

Turn off the heat and add chopped chives. Give it a final good stir and our “spicy chicken kottu” is ready to serve.



Note 

You can adjust the amount of chicken gravy to your liking.

Cook it under medium low – medium flame.
