In Sri Lanka, kottu is one of the most popular foods. Kottu is a good combination of Parata, Chives, Carrot, Cabbage, and Onions. To increase the moisture we add this magical Chicken Gravy when making Kottu. You can also eat bread or rice dipped in this curry. Let’s explore the secret recipe.
Ingredients
01) 700g of chicken
02) 1 large onion – Diced
03) 7 garlic cloves – Crushed
04) Curry leaves
05) Pandan leaf
06) 3 tbsp. of chili powder
07) 1-1.5 tbsp. of un-roasted curry powder
08) Salt
09) Lime juice
10) 1 large tomato – Diced
11) 1 tsp of Fenugreek seeds
12) 1-inch ginger – Crushed
13) 3 green Chilis
14) 1tsp of Turmeric powder ( optional )
15) 1 cup of Coconut milk- 1st extract
16) 1/2 cup of water
17) 3tbsp of Coconut oil
Method
Step 01
Add Coconut oil to your pan/clay pot.
Step 02
When the oil is heated add 1/3 of Diced onion, 3 crushed garlic cloves, ginger. Stir it until onion slices become slightly golden brown.
Step 03
Then add curry leaves and stir them for another minute. After that add Chili powder. Stir it for about 10 s. Make sure to cook on low flame otherwise, Chili powder will burn.
Step 04
Finally add the remaining ingredients except for the lime, water, and Coconut milk. Mix well.
Step 05
Put the lid on and cook it for about 7 minutes under low flame.
Step 06
After that add Coconut milk and water.
Step 07
Cook it for about 15 to 20 minutes in medium-low flame. Don’t forget to stir it from time to time. ( cook with lid off in the last 10 minutes hence by that you can reduce the gravy and it gives you a thicker, rich gravy)
Step 08
Finally, add some fresh lime juice.
Note
- Cook this under low – medium flame.
- Make sure to stir it once in a while to avoid coagulation of Coconut milk.
- Adjust seasoning according to your taste.
- Best for Kottu, parata ,bread and Roti.
