Chow Mein is a delectable Chinese cuisine that is made with noodles and a special chicken and vegetable sauce. This is suitable as a main course for a lunch or a dinner. Crispy chow mein contains crispy noodles. The crispiness of the noodles mixed with a thick sauce enriched with flavors will give you a divine taste for sure.
My family is full of Chow Mein lovers and I decided to prepare Chow Mein for dinner with a bit of a Sri Lankan taste to it. When making crispy chow mein, you have to make the Sause and the noodle. Let’s see how this delicious dish is made.
Ingredients
For noodle
- Noodles -250g
- Oil ( olive oil, coconut oil )
- Salt to taste
For Sauce
- Chicken 150g
- Carrot – 3 medium-size carrots
- 2 Leeks
- Cabbage -100g
- Garlic – 6 cloves
- One big onion
- Coriander seeds
- Green chilies – 2
- Ginger to taste
- Sesame oil – Tbsp. 2
- Soy sauce – Tbsp. 2
- Oyster sauce – Tbsp. 2
- Salt to taste
- Sugar – Tbsp. 2
- Pepper – Tbsp. 2
- Chicken broth
- Corn starch – Tbsp.2
Method
Sauce
Step 1
Take green chilies, garlic, ginger, and coriander seeds put them in a grinder, and grind them until it becomes a paste. Let it aside.
Step 2
Mix soy sauce, sesame oil, oyster sauce, pepper, and sugar in a cup and add corn starch to thicken the sauce.
Step 3
Cut the vegetables and chicken into pieces.
Step 4
Add 2tbsp. of cooking oil to a vessel and heat it on the stove. Then add green chili garlic paste and stir until it brings the aroma. Add sliced onions and chicken pieces. Give it a stir and cover the vessel for it to cook for 3 mins.
Step 5
Add other Vegetables and soy sauce mixture to the vessel and stir it.
Step 6
Add the chicken broth, cover the vessel and let the vegetables cook.
Step 7
Add salt as you prefer.
Noodle
Step 1
Cook noodles in boiling water with salt until it becomes al dente. Drain off the water
Step 2
Add Cooking oil to a pan and heat it on the stove. Add a section of noodles into the pan and let it fry until golden brown without stirring. After it turned golden brown fry the other side of the noodle. You don’t have to fry until all the noodles become brown. Make sure to fry only the surface.
Step 3
Take a bowl put all the noodles and pour the sauce on the noodles. Ta-Da! Your crispy chow mein noodle is ready.
Note-
If the sauce is too spicy add sugar. Sugar can lower the spiciness.
If the sauce is too liquidy, add corn starch. It can thicken the sauce.
Do not fry all the noodles.
