Turmeric Yellow rice is one of the most famous dishes in Sri Lanka. This is the main dish that Sri Lankans never fail to prepare when it is a special event. Imagine a house full of aroma coming from yellow rice combined with the fragrance of cardamom. The milky taste coming from Coconut milk increases the appetite. Let’s make some delicious turmeric yellow rice and surprise the guests.
Ingredients
1kg samba rice(washed and rinsed)
1 cup of Coconut milk
1 onion
1/2 a garlic
1 cinnamon stick
Ginger 1tbsp
Pandan leaves (2 or 1.5)
Curry leaves
Butter 2tbsp
Coconut oil 1tbsp
Cardamom 6 pods
Cloves 6
Turmeric powder 2.5 tsp
15 whole Peppercorns
Cashew nuts
Dried plums
Lemongrass 1 stalk
Salt
2 cups of water (depends)
Method
01) Put a pan on the stove and add Coconut oil and butter.
Then add sliced onion and cook it under low flame until it gets slightly brown.
Then add Pandan leaves, Curry leaves, cinnamon, crushed garlic🧄, ginger, and other remaining spices.
02) Stir it continuously until onion slices get brown(not very dark, don’t burn it😅).
03) After that add Coconut milk🥥🥛 to the pan and quickly turn off the cooker. Add this mixture to the rice cooker. Add rice and season with salt. 🧂 Add water to cook the rice. Once the rice is cooked decorate it with Cashew nuts and dried plums.
Note
You can add more Coconut milk instead of water and more butter if you need it. You must cook this under low flame because you have to wait until all the spices release tastes and aroma to the melted butter-oil mixture. I recommend adding less butter and coconut milk.⛹️🏋️
You can avoid Coconut milk to prepare a more healthy meal with less fat. Then add water instead of Coconut milk. Adjust salt 🧂and pepper according to your taste.
This rice goes well with Seeni Sambol, chicken Curry and white dhal curry.
