You may have noticed that we have used different varieties from the same ingredient and you must be wondering why…? It is because even though the ingredients are similar the characteristics are different from each other. For example, when it comes to flour, bread flour and all-purpose flour have different qualities. All-purpose flour gives you the standard cookies, but by adding when you add bread flour the chewiness in the cookie will be enhanced.
White sugar will provide you the spread in the cookies whereas dark brown sugar will give you a very strong flavor.
Rather than just using the butter when you are using the toasted melted butter your cookies will look greasier and spread widely.
By using an egg and an egg York your cookies will get this fudgy texture.
