There are various ways that we can prepare chicken. We have presented you with many recipes to make chickencurries. As Sri Lankans love to eat rice and curry, they have amazing cuisines spreading down from generation to generation. We have a different way to cook chicken today. Imagine starchy sweet potato dice mixed with spicy chicken pieces enriched with Sri Lankan spices.
Sweet potatoes can absorb the flavors and add sweetness to the curry. Coconut milk will add a milky taste to the curry and will thicken the curry. Let’s get started.
Ingredients
01) Chicken pieces 750g
02) Sweet potatoes – 300g – Diced
03) 1/2 cup of coconut milk – ( 1st extract )
04) Curry powder 1 tsp
05) Chili powder- 1tsp
06) Onion 1 (large) – diced
07) Garlic cloves – 6
08) Cardamom – 5
09) Salt – as you need
10) Tomato – 1 large
11) 1Fenugreek seeds – 1tsp
12) Curry leaves
13) Pandan leaf
14) Lime
15) Pepper – as u needed
16) Coconut oil – 2tbsp
Method
Step 1
Take a pan or a pot. It is better if you are able to find clay to prepare this curry. Add Coconut oil to a clay pot/pan.
Step 2
Add 1/3 of Diced onion, 3 chopped garlic cloves, curry leaves, and cook it under low flame until onion gets slightly brown.
Step 3
Then add the rest of the ingredients.
Step 4
Put the lid on and cook it under low flame.
Step 5
Cook it until Chicken is well cooked and sweet potato pieces get tender.
Step 6
Finally, squeeze some fresh lime juice.
Step 7
Give it a good stir and serve it.
Note
adjust salt and spiciness according to your taste.
