Sri Lankans ‘ main meal is rice and curry. Potato is a common dish in a rice and curry meal. Sri Lankans prepare potato curry in various ways. Traditional tempered potato curry is a dry curry with soft and spicy potato cubes. What else do we need than a dish of rice with Traditional tempered potato curry well combined with the strong flavor of onions savor of chilies and fragrance of cinnamon? Ingredients
01) Potato 400g
02) Onion 300g
03) Curry leaves
04) Pandan leaf
05) Chili flakes
06) Salt
07) Cinnamon stick
08) Cardamom 5
09) Cloves 5
10) Salt
11) Water 1/4 cup
12) Coconut oil
13) Garlic cloves 5
14) Maldives’ fish flakes 2tbsp
Method
01) Pour enough water to completely cover the potatoes. Boil the potatoes until they are completely soft. To the boiling water, add salt.
02) Take the potatoes out and peel them off. Using a kitchen towel, absorb any extra water.
03) Cut potatoes into the preferred size of cubes.
04) Take a pan and put it on a stove under a low flame. In a pan, pour in some oil. Stir in the sliced onion until the onion pieces are slightly golden.
05) After that, add the curry leaves, Pandan leaf, potatoes, crushed garlic, and the rest of the spices.
07)Cook over low heat, stirring frequently. Season with salt and red pepper flakes. Give it a thorough swirl after that.
08) Now add water and cover it with a lid. Let it simmer until all the water evaporates.
