Ingredients
01) 155g of plain flour
02) 7.1g of baking powder
03) 110g of butter
04) 100/120g of sugar
05) 2 eggs
06) 2tsp of vanilla extract
07) 120ml of buttermilk
08) Strawberry jam
Method
Step 01
Firstly add butter and sugar to a bowl and mix them.
Use an electric beater to mix.
Beat until it’s well combined.
Step 02
Then add 2 eggs and vanilla extract to the mixture.
Beat it again until all ingredients are well combined.
Step 03
After that add your flour and baking powder in thirds.
Step 04
Also, add the buttermilk gradually.
Beat it at medium speed until all are well blended.
Step 05
Take your cupcake/muffin tray and put cupcake liners in each.
Step 06
Then pour the batter halfway through the cupcake liner and add about 1tsp/2tsp of strawberry jam.
Then pour the batter again.
Step 06
Bake it for about 20 mins or until it gets a nice golden brown color in a 180°c preheated oven.
Note
you can have any kind of jam you like.
Make sure you don’t overfill the cupcake liners.
Add buttermilk to get super soft muffins. If you don’t have buttermilk, use buttermilk substitutes.
7.1 g of baking powder = 1 1/4 tsp of baking powder
