Easy and healthy breakfast look no further, give this simple 15 min Egg-in-the-hole smoked salmon & avocado toast recipe a try to start out your day with a BANG.
Ingredients
- 3 tbsp of butter
- 2 slices of bread
- ½ avocado
- ½ lemon
- 1 tbsp watercress
- 1 large egg
- few slices smoked salmon
- Sprinkle of salt and pepper
Directions
- Using a pan, heat up 1 tbsp of butter, with the rest of the butter, butter both side of the bread pieces; after using a cookie cutter or a glass cut a circle middle of the bread.
- Throw the bread into the pan, let it cook on each side for about 2 mins or until golden brown.
- While the bread is cooking cut your avocado in to thin strips, easiest way to do this is cut avocado in half, remove pit and slice it while in the exocarp in a linear motion after grab a spoon and remove it and sprinkle some lemon juice and salt and pepper on it, grab the watercress at same time and also sprinkle some of the lemon juice on it.
- After flipping the bread, carack the egg open and fill it into the hole slowly, cover the pan with a lid and turn the heat down and let it cook for another 1-2mins until the egg is up to your likeness. (Would recommend a little bit of a runny egg)
- After you get your 2 pieces of toast out. Put it on to a plate with the non-cut out piece on the bottom. Afterwards put your sliced avocado on top of that piece and cover it, after grab youre smoked salmon and layit down on top of the avocado.
- Finish it by putting the egg bread on top, sprinkle some lemon juice and salt and pepper on top.
- Enjoy it to the max
