Creole Chicken with Garlic Mashed Potatoes

Mouth-watering chicken dish that tickles all of your taste buds from spices to the soft juicy chicken, with a complimentary garlic mashed potatoes alongside a bed of asparagus grilled with lemons to perfections to give your dinner 5-star restaurant feel.

This has always been a personal favourite dish of mine, whenever I have people over this is what I make them simply because it’s easy, don’t take too much of your time and at the end its very beautiful on plate and even more delicious, your mouth will thank you over and over.

The recipe is for 1 person, just remember to multiply ingredients depends on how many you’re making for.

 What you’re going to need:

  • 1 skin on chicken breast
  • 3 potatoes
  • 5-6 pieces of asparagus
  • 8 tbsp of butter
  • 6 tsp salt
  • 2 pieces of minced garlic
  • 1 lemon
  • 1 tsp of oil
  • ½ cup of cheese of choice

Chicken Rub

  • 1 tablespoon paprika
  • 2 tablespoons smoked paprika
  • 1 teaspoon cayenne pepper, cut in half if you prefer less spicy
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper



Method

Step1)

take the skin off and throw your potatoes to boil in low heat, and add 2 tsp of salt to the boiling water, boil for about 7-10 mins or until potato’s softens, at the same time you’re going to pre heat your oven at 425 degrees.

Step 2)

Okay let’s get started with our skin on chicken breast, were going to cut open in half down the middle from the side like the picture below:

You should have something that looks like the picture on the right, make sure the skin is on because flavour will be boosted by the fat, and it’ll help chicken not to dry out.

Step 3)

now let’s make the spices for our chicken rub:

Mix the chicken rub spices in a bowl, and covered the entire breast with the spices, it should be picture 4

Step 4)

Grab 3 tbsp of butter add 2 tbsp of the spice mix to the butter and leave it in the fridge until serving time

Step 5)

grab a baking sheet make sure to oil or butter it just a little bit, place your chicken and throw it in the oven for about 12-15 mins, when the temperature rises to 165 in the piece of chicken, you’re ready to pull it out.

Step 6)

by this point your potatoes should be ready, you’re going to mash it up with a fork or with mixer, add the remaining amount of butter along with the 2 pieces of minced garlic and ½ cup of cheese and mix well until you get a smooth mixture

Step 7)

at this point 2/3 of meal is done. asparagus only takes 2-3 mins in the oven so when your chicken is at the 10 min mark, cut your lemon into slices grab about 3 slices, grab your asparagus throw it in the tray with 1 tsp of oil and the lemon and throw it in the oven, keep an eye on it as it can burn easily.

REMEMBER YOU EAT WITH YOUR EYES FIRST SO PLATING IS JUST AS IMPORTANT!

At this point everything should be ready and pulled out ready to plate, plating instructions as follows:

Right in the middle of the plate you’re going to make yourself a mash Potatoe mountain, put few pieces of asparagus on top of mash potato after you’re going to put the chicken on the bed of mashed potatoes and asparagus, and to serve it you’re going grab that butter we put in the fridge and put scoop of it on top of chicken and it’ll melt beautifully on top of the chicken with the heat that chicken already has.
